1 cup Milk
4 Nugget potatoes (cooked)
1 red pepper (roasted, skin removed)
½ medium onion
4 slices black forest ham (chopped)
Pre-heat oven to 375°F
Whisk eggs into a mixing bowl, add in the milk. Slice the cooked potatoes about ¾” thick, slice the pepper into thin strips. Preheat a pan at medium heat, in the meantime slice the onion thinly, add to the pan with a bit of cooking oil of your choice; sauté the onion 4-5min.
Next add the potatoes, ham, and peppers into the pan, season with salt and pepper, and add the egg mixture, give a quick stir at medium-low heat for 2min, then let the frittata finish cooking in the oven for 12-15 min.
Flip over onto a cutting board, slice up and enjoy.
